Kevin Doucette spends his summers selling waffles to hungry festival-goers.

“It can get pretty chaotic at some of these events,” says Doucette while adding fresh dough to his irons. “A lot of organizers literally just tell you ‘Go find a spot.’ You’re on your own.”
